Neer Dosa Makes 3 to 4 dosas

1/2 cup rice, soaked
4 tbsp + 1 cup water
1 tbsp grated coconut (optional)
Salt to taste
2 tbsp oil

1. Soak the rice for 2-4 hours

2. Drain the excess water and transfer the rice to a mixer

3. Add 4 tbsp of water, coconut (optional), and salt to it

4. Blitz it for 4-5 minutes or till it turns into a paste. Transfer this to a bowl

5. In a pan, heat oil on a low-medium flame. Spread the batter with a ladle on the pan once it's hot

6. Cook this batter for 40 seconds on a low-medium flame on one side and then start rolling it out

7. Do this for the remaining batter and transfer it to a dish. Serve with chutney of your choice

The batter of this dosa can be super soft. Use a non-stick pan otherwise, the batter can stick to the pan.
